Hi Colin,

I too have experienced a similar change in palate for whiskies. In fact, a

lot of my bottles seem to change in flavor over time after they are
opened. 
Most of the time they get better. Some fall out of favor only to return to

the daily dram status after a long break. The change of taste may just be 
all in my head, but I have most definitely had on again - off again 
experiences with a particular bottle or brand of scotch or whiskey.

One thing is for sure, if I have an off experience that isn't because the 
spirit is fundamentally flawed, I will come back to it later and my 
perception of the taste will change.
