The machine is called the California Wine Machine, and I bought it in
the mid 1980s. I have seen no mention of it in recent years and likely
the company is out of business. Some features include stainless steel
tubes, sealed by O-rings that slide up and down in the bottle. You
first position the tube just above the level of the wine and open the
tap several times to flush out all air in the top of the bottle. Then
you lower the tube into the wine. Some modern wine machines do not
have this feature and the air in the neck of the bottle and tap is not
removed by flu****ng. The machine came with a usual high pressure
regulator for a cylinder of nitrogen that contains nitrogen compressed
to over 2000 pounds per square inch. If a high pressure regulator for
a cylinder is not provided, nearly any welding supply store can
provide you with one. I use the grade called "pre-purified nitrogen"
which has far less oxygen impurity than regular compressed nitrogen. A
welding supply store in most cities of even moderate sizes can order
the nitrogen for you. I used the "Q" size cylinder that is about 1/2
the size of the tall cylinders you see in welding shops and can be
moved without breaking your back - it likely is slightly under 50
pounds. Just be sure to securely fasten the nitrogen cylinder to the
wall so it can not fall over after the protective cap is removed and
the pressure regulator is installed. If a cylinder falls over and
breaks off the pressure regulator, the cylinder can take off like a
rocket and do much damage. Some of the modern wine machines use tiny
containers of fairly low pressure nitrogen or argon that you have to
buy from them and that can be very expensive in the long run. Another
gas you can use is argon, also available through welding supply
companies. Since the high pressure regulators for nitrogen, argon, and
helium usually are the same, you likely can use nitrogen or argon for
most machines that use a standard high pressure cylinder and gas
regulator. I believe two wine equipment companies listed in the FAQ
sell wine machines from their web sites, but since I have not used any
of these, I can offer no comments on their quality.
