I've got an imperial IPA that has some really inconsistent carbonation. One
bottle will have no fizz, the next will overflow when opened. Rarely is it
just
right. I opened one recently and the entire contents of the bottle foamed
out. A total loss. So I immediately grabbed another, popped it and poured.
No fizz at
all. It tastes good, though.
I decided to try a Cooper's carbonation drop as an experiment. So, I
opened
one of the IPAs, saw that it was one of the "no fizz" variety, and added
the
drop. Instantly the beer foamed over. Then I grabbed another beer, popped
it
and added a drop. No problem. So, I recapped it and waited a week. When I
opened it, no fizz.
I've seen this occur in other batches my friends and I have brewed. What
could be causing this? Our technique is to dissolve the priming sugar into
some of the boiled wort, place that into the bottling bucket, and rack the
wort on
top of it to make sure it's evenly distributed. We're also using Star-San
for sanitizing the bucket, bottles and caps.
