Overcarbonated lager - best way to salvage???

I overcarbonated 2-5 gallon batches of bottled lager.  I think what
happened is I changed fermenting locations from a wine celler at about
45-50 degrees to my garage at 35-40 degrees,

I think I bottled it before fermentation was 100% complete. (approx. 2
weeks in primary, 2 wks in secondary)

I'm looking for the best way to salvage the beer.  I uncapped about 24
bottles and am going to let some CO2 fart off.  How long should I
leave them uncapped?  If I wait until the activity dies down will the
same thing happen all over again when I recap them??  If I wait too
long I'll end up with flat beer.

Since homebrewers have to drink their mistakes I'm trying to figure
out when I should recap them so they continue to generate some CO2 but
not so long as to them becoming flat.

Any suggestions.  The beer is actuallyquite good - they're just
gushers.
