Grain Steep..

OK relative newbe.. five whole batches under my belt 5gal ones.. Been using

BrewersBest kits, nice clean easy.
Have been reading as much as I can on brewing, books internet, etc.

Question I have is on the 'special' grains that are in kits. The 
instructions say to steep for 20min. at 160-170. This seems from what I
have 
read to be the last step in brewing a whole grain wort been.
Would it have any advantages to go the whole ma****ng route with these 
grains? Just what do the extra grains add to an extract kit?
Color? Flavor? extra sugar?
