"Crystal" refers to crystal malt.  This is malted barley that has
been roasted damp to create complex sugars which don't ferment
out.  It comes in different levels of roast, which effect flavor
and which are designated by number; the higher the number, the
more roasty.  Crystal 40 is pretty general purpose.  AKA known as
caramel or carmel malt.
