1 pack Nottingham Yeast rehydrated.
It has been in the primary for 5 days, and fermentation has slowed to a
crawl. I'm predicting that it will be done by Sunday (7/20). I'll double
check with the Hydro to make sure, though.
I have a Canoe trip in 16 days, and I'd really like to take some of this
with me. So I'm thinking of skipping the secondary this time and going
straight to the bottle. This would give it almost 2 weeks to carbonate.
I've never gone to bottle this quickly before. I usually always move to a
secondary for at least a week or two, and there is usually at least 5-6
weeks total between brew day and drinking for my average batch. Other than
a
little extra sediment in the bottle, do you all think this will be decent
to
drink by then, or should I just wait, and pick up some extra package for
the
trip?
