All grain first batch

I have been extract and partial mash brewing for over a year[0] and
have been slowly building my all grain kit.  I am almost done with
building it and while my goal is to do some hefe and wit I want to
take it easy on my first all grain batch.  

I am looking for recomendatoins on a good first all grain batch.
Something that can be comfortably done without worrying too much about
if the mash temp changes 2 degerees in either direction and isn't too
hopy or malty, has a simple grain bill and won't lock up my carboy for
3 weeks.  

I was thinking something like a blond or a nukey clone might be a good
bet but haven't settled in on anything yet.  Any recomendations for
somthing that isn't malty/hoppy?

Also, other than buying an electronic toy what is the best way to get
an accurate gravity reading while the must is still hot?  I see so
many things on checking gravity befor starting the boil but nothing
that explains how to do this in a time effiant mannor while fretting
over chilling a sample down to a safe temp so you don't bust your
hydrometer. 


[0] And yet I still got (forced) to be president of the local brewers
club.
